It is made from barley koji, soybeans, and salt.

We are using Barley from Burrum biodynamic, VIC.

 

Kaokao Barley miso, fermented for over 13 months,

has a deep and rich flavour but is still milder and slightly sweet. 


Kaori moved to Australia from Japan in 2010.  Kaori's dream is to bring delicious, healthy and authentic miso paste to Australia.  Kaori's small batch miso is all hand made in Daylesford, Victoria using Australian soybeans and is naturally fermented. Kaori hopes to shar the traditional miso paste of their home - Japan!
